SUS VENTAJAS NUTRICIONALES
La comercialización del cordero magallánico se sustenta en ser ori- ginaria de sistemas de producción extensiva, asociada a bienestar animal y a producción limpia. Si bien ésta ha sido la carta de pre- sentación del «cordero magalláni- co», actualmente los consumidores demandan alimentos que sean de calidad e inocuos, conceptos que se asocian a alimentos saludables. Por otra parte la demanda requiere conocer la calidad organoléptica (características de sabor, aroma, textura) así como nutricional de los productos que consume. Los antecedentes aportados por el presente trabajo podrán servir de base para implementar nuevas es- trategias de venta que permitanque el cordero patagónico se posi- cione en el mercado interno y ex- terno con características que lo identifiquen como un producto di- ferente y de mayor competitividad. Corderos de distintas zonas En la primera etapa de una línea de trabajo orientada al estudio de las variables que inciden en la ca- lidad de la carne del cordero Pata- gónico se está estudiando cuáles son las características físicas y químicas que presenta aquella pro- ducida en las tres áreas agroeco- lógicas de Magallanes: estepa, zo- na intermedia y zona húmeda. Para realizar el estudio se tomaron
Rebaño de ovejas y corderos en praderas naturales de coironales. corderos provenientes de predios de las tres áreas indicadas. Como se considera que aproximadamen- te el 60% de la superficie agrope- cuaria corresponde al sector agroecológico de estepa, donde
se concentra la masa ovina regio- nal, se representó un total de 41 predios, o sea el 56,94% del total de las estancias estudiadas. Para los sectores intermedio y zona húmeda se eligieron al azar 21

(29,17%) y 10 predios (13,89%), res- pectivamente. Los corderos se faenaron en el Matadero Frigorífico Simunovic y allí se tomaron muestras de lomo (Longissimus dorsi) de cinco canales de corderos, cuyo peso prome- dio se aproximaba al peso prome- dio del lote al que pertenecían, por predio, las que fueron remitidas al Instituto de Nutrición y Tecnología de los Alimentos (INTA) para su análisis en Santiago. Peso de canal: un parámetro a evaluar Una información relevante es el peso que logra la canal de los cor- deros que se comercializan. La in- formación recopilada indica que el cordero magallánico no supera en promedio los 12 kg/vara en el sector de estepa y zona intermedia. En la zona húmeda, la de mayor potencial forrajero, se logra 13,4 kg/vara. Estos valores corresponden a la realidad regional para corderos faenados entre cuatro y cinco me- ses de edad. Los pesos indicados catalogan como liviano al cordero de estas latitudes, contando con mercado en países como México y España, principalmente.
Información de calidad El valor nutricional de la carne se describe, en este trabajo, a través de los contenidos de proteína, gra- sas, cenizas, humedad y minerales como hierro y zinc, parámetros con que se define sus características y que nos permiten comparar con las otras carnes existentes en el mercado. Para entender la importancia de conocer la composición de la grasa de la carne de cordero, se debe señalar que ésta contiene tres tipos diferentes de ácidos grasos:
- Ácidos grasos saturados (SFA).
- Ácidos grados monoinsaturados (MUFA).
- Ácidos grasos poliinsaturados (PUFA).

Con relación a la grasa total, las cifras observadas en cordero ma- gallánico (6,4%) son inferiores a las de las otras especies, incluyen- do cordero de otras latitudes, cuyos valores van de un mínimo de 9,21 en cerdo a un máximo de 10,17% precisamente en corderos. Para el total de los perjudiciales ácidos grasos saturados (SFA), el cordero local es levemente supe- rior en su contenido a los valores referenciales de cordero, vacuno, cerdo y ternera. En cuanto a ácidos grasos saluda- bles del «cordero magallánico», los monoinsaturados (MUFA) sobrepa- san un poco el nivel de otros cor- deros y de la carne de vacuno, cerdo y ternera. Las cifras de po- liinsaturados (PUFA) alcanzan va- lores semejantes al vacuno e infe- riores al cerdo, ternera y corderos de otras regiones. Entre los ovinos de Magallanes, los de la zona in- termedia alcanzan el mayor valor, con 804 mg/100 g.
La energía expresada como kcal/100 g es semejante a la carne de vacuno y levemente superior a la de cerdo y ternera (valores de 144 a 148 en «cordero magallánico» y 127 a 136 en cerdo y ternera, res- pectivamente).
Los valores de proteína encontra- dos en este estudio van de 21,6 a 22,6%, porcentajes muy superiores a los descritos en la literatura para cerdo, vacuno, ternera y cordero. Sin embargo al comparar con tenidos en carnes magras (aquellas con bajo contenido de grasas), los promedios de proteína de las tres zonas son similares a los reportados por la literatura para diversos tipos de carne (cuadro 2), al igual que la humedad, cenizas y energía. Los datos de referencia son muy variables y esto obedece a que la composición de la carne es dependiente de la edad de faenamiento, de la alimentación, de las razas y de los cruzamientos entre ellas, entre otros facto- res.
COLABORADORES Es importante destacar la contri- bución de destacados profesio- nales en el desarrollo de la pro- puesta y el proyecto: J. Karmelic, Químico Farmacéutico; R. Lira, Ingeniero Agrónomo, M. Sc.; F. Sales, Médico Veterinario, y S. Reyes, Técnico Agrícola.

El ser humano requiere de 10 mg diarios de hierro para los infantes, 12 mg para los adoles- centes, y 12 y 15 mg para hombres y mujeres, respectivamente. Las fuentes de hierro son las carnes rojas, pollo, pescado y mariscos. Con relación al zinc, 3 a 5 mg diarios en infantes y 10 a 15 en adolescentes y adultos. El zinc se encuentra en las carnes rojas, pescado, pro- ductos lácteos, cereales, nueces y porotos. El «cordero magallánico» supera con creces los niveles de hierro y zinc con relación a las carnes magras y no magras indicadas. Este antecedente es relevante si se considera que un país como Nueva Zelanda mantiene una política publicitaria en la cual se in- forma a la población sobre la gran cantidad de hierro que tiene la carne de cordero comparada con otras de consumo común (cerdo, pollo, vacuno) y en especial está dirigida al segmento femeni- no, conocido por sus deficiencias de este elemento por efecto de las menstrua- ciones y embarazos. El alto contenido de este mineral de la carne de cordero magallánico podría constituir un ele
mento de marketing interesante. El zinc forma parte estructural de hormonas y enzimas que influyen en todo el metabolismo, favorece los procesos de cicatrización de heridas y el sis- tema inmunitario. El contenido de hierro y zinc de las praderas magallánicas es superior a lo descrito en lite- ratura, particularidad que sería uno de los factores determinantes en la composición de la carne del cordero criado en este ambiente. ¿Qué podemos concluir? Los antecedentes presentados anteriormente permitirían clasificar a la carne de «cordero magallánico» como un alimento funcional o saludable por sus principios nutritivos (proteí- nas, grasas mono y poliinsaturadas) y por el contenido de hierro y zinc. Con ello sería posible caracterizar y diferenciar a este producto, información vital para el consumidor en el mercado nacional e internacional. Se deberán plantear líneas de trabajo condu- centes a estudiar las variaciones en relación a la edad, cruzamiento y sector agroecológico así como condiciones de explotación.
